Once upon a time, an ancient man ate what he found or caught. Just washed it, cleaned it, crushed it.
Later I started cooking over a fire, then I probably started adding something for taste, like spices, or combining foods.
Modern people increasingly eat not simple food, but highly flavored food. Salt and sugar start the list of flavor enhancers. I once tried to give up salt - my favorite mushroom soup turned out to be a tasteless slurry. Many people cannot imagine how to drink tea or coffee without sugar. Next comes various chemistry, such as flavor enhancers and shaping. There are also spices that enhance the taste, but do not seem to be harmful.

Cooking has long been part of our lives, giving us ever new tastes, ever new combinations and enhancers. It may be necessary, for example, to add spicy ingredients to perishable foods. Or, to preserve food supplies for a long time, by salting or sterilization. But for the modern world, where there are stores and delivery, I think that the goal is only to increase profits. And we are tightly dependent on the pleasure of food.

And how can our body understand whether this food will be useful for it or not, if it does not taste the food, but feels the taste of enhancers? Chemistry presses on the “healthy food” receptor and we fill our stomachs with something unknown.
But, if you give up chemicals, salt and sugar, then after two weeks, when withdrawal symptoms pass, you can feel the natural taste of food. You can, walking past food counters, listen to your body, what product it needs.
